I know of most of these, gnolls are almost iconic and the yeti even established a career outside of D&D, but the bullette is new to me.

Yeah the gnoll and yeti are famous (one is more a cryptid the a monster); the bullette is a sort of big underground lizard that moves while burroweding, for then jumping out to attack it's prays.
Once it's design was litterally an underground shark!
